Step-by-step
  1. Wash the rice thoroughly and soak it in water for 15-20 minutes, then drain.
  2. Heat oil or ghee in a pressure cooker or heavy-bottomed pot over medium heat. Add mustard seeds and let them splutter.
  3. Add urad dal and chana dal, and fry until they turn light golden. Stir in asafoetida and curry leaves.
  4. Add chopped onions and green chilies, sauté until onions turn translucent.
  5. Add grated ginger and cook for another minute until fragrant.
  6. Stir in chopped tomatoes, turmeric powder, red chili powder (if using), and sambar powder (if using). Cook until tomatoes soften and mushy, and the oil separates.
  7. Add green peas and the drained rice. Sauté gently for 2-3 minutes, ensuring the rice is well coated with the masala.
  8. Pour in 3 cups of hot water and add salt to taste. Mix well.
  9. Close the pressure cooker lid and cook for 2 whistles on medium-high heat. If using a pot, cover and cook on low heat until all water is absorbed and rice is cooked through (approx. 15-20 minutes).
  10. Once cooked, let the pressure release naturally. Open the lid, gently fluff the Tomato Bath with a fork.
  11. Garnish with fresh chopped coriander leaves and serve hot with chutney or raita.
