Step-by-step- In a dry pan over medium-low heat, add coriander seeds, cumin seeds, black peppercorns, cloves, green cardamom pods, cinnamon stick, and dried red chilies (if using). Toast the whole spices for 3-5 minutes, stirring frequently, until fragrant and slightly darker. Be careful not to burn them.
- Remove the toasted spices from the pan and spread them on a plate to cool completely. This prevents them from sweating and clumping when ground.
- Once cooled, transfer the toasted spices to a spice grinder or a high-speed blender. Grind them into a fine powder.
- Add the ginger powder, garlic powder, amchur, turmeric powder, Kashmiri red chili powder (if using), and salt to the ground spices. Pulse a few times to ensure everything is well combined.
- Sieve the Tandoori Masala to remove any larger, unground pieces. Re-grind any coarse bits if desired for a smoother powder. Your homemade Tandoori Masala is ready to use!
