  1. Prepare the sweet limes: Peel the sweet limes, remove all seeds and pith, and finely chop the pulp. Set aside.
  2. Make the jaggery syrup: In a heavy-bottomed pan, combine jaggery and water. Heat on medium flame, stirring until the jaggery completely dissolves. Strain the syrup to remove any impurities.
  3. Combine ingredients: Return the strained jaggery syrup to the pan. Add the chopped sweet lime, vinegar, red chili powder, roasted cumin powder, black salt, garam masala, and asafoetida. Mix well.
  4. Simmer the chutney: Bring the mixture to a boil, then reduce the heat to low. Simmer gently, stirring occasionally, for about 20-25 minutes, or until the chutney thickens to a jam-like consistency. The sweet lime pieces should become tender.
  5. Prepare the tempering: In a small separate pan, heat the oil. Add mustard seeds and let them splutter. Then add fenugreek seeds, dry red chilies, and curry leaves. Sauté for a few seconds until aromatic.
  6. Finish the chutney: Pour the tempering over the simmering chutney. Mix thoroughly and cook for another 2-3 minutes. Remove from heat and let it cool completely before transferring to a sterile jar.
