  1. In a small bowl, combine the diced bell peppers, red onion, and minced jalapeño (if using). Season lightly with salt and pepper.
  2. Heat 1 tablespoon of oil in a large non-stick skillet or on a griddle over medium heat.
  3. Place one tortilla in the skillet. Sprinkle about 1/4 cup of cheese over half of the tortilla.
  4. Spoon about 1-2 tablespoons of the vegetable mixture over the cheese.
  5. Sprinkle another 1/4 cup of cheese over the vegetables.
  6. Once the bottom of the tortilla is lightly golden and the cheese starts to melt, fold the plain half of the tortilla over the filled half to form a half-moon.
  7. Cook for another 2-3 minutes per side, pressing gently with a spatula, until both sides are golden brown and the cheese is fully melted and gooey.
  8. Remove from the skillet, transfer to a cutting board, and cut into wedges. Repeat with the remaining tortillas and filling, adding more oil as needed.
