Indian Pizza Puff
A delightful fusion of crispy puff pastry and spiced Indian pizza filling, perfect for a quick snack or meal.

Step-by-step- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Heat olive oil in a pan over medium heat. Add ginger-garlic paste and sauté for 30 seconds until fragrant.
- Add chopped mixed vegetables and cook for 5-7 minutes until softened. Stir in red chili powder, turmeric powder, garam masala, oregano, and salt. Cook for another minute.
- Remove from heat, add crumbled paneer, pizza sauce, 1/4 cup mozzarella cheese, and fresh cilantro. Mix well and let the filling cool slightly.
- Unroll the puff pastry sheets. Cut each sheet into 6 equal squares. You should have 12 squares in total.
- Place a spoonful of the cooled filling onto one half of each puff pastry square. Moisten the edges with water or the egg/milk wash.
- Fold the other half of the pastry over the filling to form a triangle or a rectangle. Press the edges firmly to seal, then crimp with a fork to ensure a tight seal.
- Brush the tops of the puffs with the egg wash or milk. Sprinkle a little extra mozzarella cheese on top of each puff.
- Arrange the puffs on the prepared baking sheet, leaving some space between them.
- Bake for 20-25 minutes, or until the pastry is golden brown and puffed up. Serve hot with ketchup or mint chutney.

Store cooled pizza puffs in an airtight container. They may lose some crispness.
Freezer Up to 1 month
To freeze, place baked and cooled puffs in a single layer on a baking sheet to flash freeze. Once solid, transfer to a freezer-safe bag or container. Can also freeze unbaked puffs on a tray then transfer to a bag.
Reheat Oven/Air fryer
Reheat baked puffs in a preheated oven at 350°F (175°C) for 10-15 minutes, or in an air fryer at 325°F (160°C) for 5-8 minutes, until heated through and crispy. If reheating from frozen, add extra time.

- For extra flavor, add a pinch of chaat masala to the filling. You can also experiment with different vegetables like finely chopped spinach or capsicum.
- Ensure your puff pastry is properly thawed but still cold for best results. Overworking the pastry can make it tough.
- If you prefer a spicier kick, add finely chopped green chilies to the vegetable mixture. For a richer taste, use ghee instead of olive oil for sautéing.
