Pepper Chicken Dry

Step-by-step- Marinate the chicken pieces with ginger-garlic paste, turmeric powder, red chili powder (if using), garam masala, 1 tsp black pepper powder, and salt. Let it rest for at least 15-20 minutes.
- Heat oil in a heavy-bottomed pan or wok over medium heat. Add whole black peppercorns and curry leaves, let them splutter for a few seconds.
- Add the finely chopped onions and green chilies. Sauté until onions turn translucent and light golden brown.
- Add the marinated chicken to the pan. Sauté on high heat for 5-7 minutes until the chicken changes color and is lightly seared on all sides.
- Reduce heat to medium-low, cover the pan, and cook for 10-12 minutes, stirring occasionally, until the chicken is tender and cooked through. If the mixture is too dry, add a splash of water.
- Remove the lid, increase heat to medium-high. Add the remaining 1 tsp fresh black pepper powder and toss well. Cook for another 5-7 minutes, stirring continuously, until the chicken is dry and coated with the spices.
- Garnish with fresh coriander leaves and serve hot.
