- If using block tamarind, soak it in 1/4 cup warm water for 10 minutes, then mash and strain to extract the pulp. Mix this tamarind pulp with grated jaggery until dissolved.
- Transfer the mint-coriander paste to a large bowl. Add the tamarind-jaggery mixture, roasted cumin powder, black salt, chaat masala, dry mango powder, and black pepper powder.
- Gradually add the chilled water, stirring continuously to ensure all ingredients are well combined. Taste and adjust the seasonings — add more salt, spice, tang (lemon juice or more tamarind), or sweetness as per your preference.
- For a smoother Pani Puri water, you can strain the mixture through a fine-mesh sieve, pressing down on the solids to extract maximum flavor. Discard any remaining fibrous bits.
- Chill the Pani Puri masala water thoroughly in the refrigerator for at least 30 minutes before serving. This enhances the flavors and provides a refreshing experience.
