Step-by-step
  1. In a bowl, combine the finely chopped onions, green chilies, coriander leaves, grated ginger (if using), cumin seeds (if using), and a pinch of salt. Mix well and set aside.
  2. Heat a non-stick tawa or cast-iron griddle over medium heat. Once hot, lightly grease it with oil or ghee.
  3. Pour a ladleful of dosa batter onto the center of the tawa. Using the back of the ladle, spread the batter in a circular motion outwards to form a thin, even circle.
  4. Drizzle a teaspoon of oil or ghee around the edges and over the dosa. Let it cook for about 1-2 minutes until the edges start to crisp and turn golden brown.
  5. Spread a generous spoonful of the prepared onion mixture evenly over the dosa. Gently press it down so it adheres to the dosa.
  6. Cook for another 1-2 minutes, or until the dosa is golden brown and crispy, and the onions are slightly softened. You can fold it in half or serve it flat.
  7. Carefully remove the Onion Dosa from the tawa and serve hot with sambar and coconut chutney. Repeat with the remaining batter and onion mixture.

Store leftover dosa batter in an airtight container. Cooked dosas are best eaten fresh, but can be stored for 1 day in an airtight container, though they may lose crispness.

Freezer Up to 1 month

Dosa batter can be frozen in an airtight container. Thaw overnight in the refrigerator before use. Cooked dosas do not freeze well.

Reheat Stovetop/Microwave

Reheat cooked dosas on a hot tawa for a minute or two to regain some crispness. Microwave reheating is not recommended as it makes them soggy. Batter should be brought to room temperature before use.

  • Ensure your dosa batter is at the right consistency – not too thick, not too thin – for crispy dosas. Add a little water if it’s too thick.
  • For an extra flavor boost, you can temper mustard seeds and curry leaves in oil and add it to the onion mixture.
  • Adjust the amount of green chilies to your preferred spice level. For milder taste, deseed the chilies.
