Step-by-step
  1. Wash and soak mixed lentils for at least 30 minutes. If using a pressure cooker, this can be skipped for some lentils but generally recommended.
  2. Heat oil or ghee in a pressure cooker or heavy-bottomed pot. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and green chilies, cook for 1-2 minutes until fragrant.
  4. Add mutton pieces and brown them on all sides, about 5-7 minutes.
  5. Stir in turmeric powder, red chili powder, cumin powder, coriander powder, and Dhansak masala. Cook for 2-3 minutes, stirring constantly to prevent burning.
  6. Add tomato puree and cook until the oil separates from the masala, about 5-7 minutes.
  7. Drain the soaked lentils and add them to the pot along with the chopped mixed vegetables.
  8. Add enough water (about 3-4 cups) to cover the ingredients, add salt, tamarind pulp, and jaggery (if using). Stir well.
  9. If using a pressure cooker, close the lid and cook for 4-5 whistles or about 25-30 minutes on medium heat until the mutton is tender. If using a pot, simmer covered for 1-1.5 hours, adding water if needed, until mutton and lentils are cooked through and tender.
  10. Once cooked, open the cooker (if applicable) and mash some of the lentils and vegetables lightly with the back of a spoon or a potato masher for a thicker, creamier consistency.
  11. Check for seasoning and adjust salt or spices if needed. Garnish with fresh coriander and serve hot.
