Mutton Dhansak
A rich, flavorful Parsi-style lentil and mutton curry, perfect for a hearty meal.

Step-by-step- Wash and soak mixed lentils for at least 30 minutes. If using a pressure cooker, this can be skipped for some lentils but generally recommended.
- Heat oil or ghee in a pressure cooker or heavy-bottomed pot. Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and green chilies, cook for 1-2 minutes until fragrant.
- Add mutton pieces and brown them on all sides, about 5-7 minutes.
- Stir in turmeric powder, red chili powder, cumin powder, coriander powder, and Dhansak masala. Cook for 2-3 minutes, stirring constantly to prevent burning.
- Add tomato puree and cook until the oil separates from the masala, about 5-7 minutes.
- Drain the soaked lentils and add them to the pot along with the chopped mixed vegetables.
- Add enough water (about 3-4 cups) to cover the ingredients, add salt, tamarind pulp, and jaggery (if using). Stir well.
- If using a pressure cooker, close the lid and cook for 4-5 whistles or about 25-30 minutes on medium heat until the mutton is tender. If using a pot, simmer covered for 1-1.5 hours, adding water if needed, until mutton and lentils are cooked through and tender.
- Once cooked, open the cooker (if applicable) and mash some of the lentils and vegetables lightly with the back of a spoon or a potato masher for a thicker, creamier consistency.
- Check for seasoning and adjust salt or spices if needed. Garnish with fresh coriander and serve hot.

- For an authentic Parsi flavor, ensure you use a good quality Dhansak masala. Some brands offer excellent ready-made blends.
- Mashing some of the cooked lentils and vegetables in the end is key to achieving the characteristic thick and creamy texture of Dhansak without adding cream.
- Serve Mutton Dhansak traditionally with Parsi brown rice (caramelized onion rice) for an elevated and complete meal experience.
