Step-by-step- If using unroasted vermicelli, dry roast it in a pan over medium heat until light golden brown. Set aside.
- Heat oil in a large pan or kadai over medium heat. Add mustard seeds and let them splutter.
- Add urad dal, chana dal, and asafoetida. Sauté until the dals turn light golden brown.
- Add curry leaves, chopped onion, green chilies, and ginger. Sauté until the onion becomes translucent.
- Add the mixed vegetables, turmeric powder, red chili powder (if using), and garam masala. Sauté for 2-3 minutes.
- Pour in 2 cups of hot water and add salt to taste. Bring the mixture to a rolling boil.
- Once boiling, reduce the heat to low, add the roasted vermicelli, and stir gently to combine. Ensure the vermicelli is submerged.
- Cover the pan and cook for 5-7 minutes, or until the water is absorbed and the vermicelli is tender. Do not overcook.
- Turn off the heat and let it rest, covered, for another 5 minutes to allow the flavors to meld.
- Fluff the Masala Seeyam gently with a fork. Garnish with fresh coriander leaves and a squeeze of lemon juice before serving.
