Kheer

Step-by-step- Soak basmati rice in water for 30 minutes, then drain thoroughly and set aside.
- In a heavy-bottomed pan, heat ghee (if using) over medium heat. Lightly toast the chopped almonds and pistachios for 1-2 minutes until fragrant, then remove and set aside, reserving some for garnish.
- Add milk to the same pan and bring it to a boil over medium-high heat, stirring occasionally to prevent scorching.
- Once the milk boils, reduce the heat to low, add the drained rice, and continue to simmer. Stir frequently to prevent the rice from sticking to the bottom, for about 30-40 minutes or until the rice is completely cooked and the milk has thickened to a creamy consistency.
- Stir in the sugar, cardamom powder, and saffron strands (if using). Cook for another 5-7 minutes, stirring, until the sugar dissolves and the kheer thickens further.
- Remove from heat, stir in the toasted nuts (reserving some for garnish) and rose water or kewra water (if using).
- Serve warm or chilled, garnished with the reserved chopped nuts.

Store in an airtight container. Kheer tends to thicken when chilled; add a splash of milk and stir well before serving if desired.
Freezer Not recommended
Freezing is not ideal for Kheer as the rice can become grainy. If you must, store in a freezer-safe container for up to 1 month, but expect texture changes.
Reheat Stovetop/Microwave
Reheat gently on the stovetop over low heat, stirring frequently, or in the microwave in short bursts, adding a little milk or water if it’s too thick.
Chef’s Corner
- Always use full-fat milk for the richest and creamiest Kheer. Reduced-fat milk will result in a thinner consistency.
- Soaking the rice beforehand helps it cook faster and achieve a softer texture, ensuring the grains are fully tender.
- Stir the Kheer frequently, especially after adding the rice, to prevent it from sticking to the bottom of the pan and burning.
- Adjust the amount of sugar to your personal preference. Some like it sweeter, while others prefer a more subtle sweetness.
- For an extra rich flavor, you can add a tablespoon of condensed milk along with the sugar.
