Jowar Roti

Step-by-step- In a large bowl, combine jowar flour and salt (if using). Gradually add hot water, mixing with a spoon until a rough dough forms. Be careful as the water is hot.
- Once the dough is cool enough to handle, knead it well for 5-7 minutes until smooth and pliable. If the dough feels too dry, add a tablespoon of hot water; if too sticky, add a tablespoon of flour. Cover and let it rest for 10 minutes.
- Divide the dough into 8 equal portions. Roll each portion into a smooth ball.
- Lightly dust your rolling surface and the dough ball with jowar flour. Gently roll out each ball into a 5-6 inch diameter circle, about 1/8 inch thick. Jowar roti can be delicate; if it cracks, gently press the edges back together.
- Heat a tawa or flat griddle over medium-high heat. Once hot, place a rolled roti on it.
- Cook for about 30 seconds until small bubbles appear on the surface. Flip the roti and cook the other side for another 30-45 seconds, until light brown spots appear.
- For soft rotis, you can press gently with a clean cloth or spatula around the edges. If you wish for it to puff, you can transfer it directly over an open flame for a few seconds (carefully!) or continue cooking on the tawa, pressing gently until it puffs up. Flip once more and cook for a few more seconds until fully cooked.
- Remove from tawa and brush lightly with ghee or oil (optional). Serve hot with your favorite curry, dal, or sabzi.

Store cooked Jowar Roti in an airtight container, layered with parchment paper to prevent sticking. Ensure they are completely cooled before storing.
Freezer Up to 2 months
Once cooled, stack rotis with parchment paper in between, wrap tightly in foil, then place in a freezer-safe bag. Thaw at room temperature or in the microwave before reheating.
Reheat Stovetop/Microwave
To reheat, place on a hot tawa for a minute on each side until warm and soft, or microwave for 30-60 seconds until heated through. A light brush of ghee can help restore softness.

- Always use hot water to knead jowar flour. This helps in developing gluten-like properties in the gluten-free flour, making the rotis softer and easier to roll without cracking.
- Don’t over-knead the dough; knead just until smooth and pliable. If the dough starts to dry out while rolling, cover the unused portion with a damp cloth.
- For easier rolling, you can place the dough ball between two sheets of parchment paper or plastic wrap and roll it out. This prevents sticking and cracking.
