Method

Step-by-step
  1. Marinate the chicken: In a bowl, combine chicken pieces with plain yogurt, 1 tablespoon ginger-garlic paste, half of the chopped green chilies, and salt. Mix well and let it marinate for at least 15-20 minutes, or longer in the refrigerator for best results.
  2. Sauté aromatics: Heat oil or ghee in a large pan or kadai over medium heat. Add cumin seeds, green cardamoms, and cinnamon stick. Sauté until fragrant, about 30 seconds.
  3. Cook onion: Add the finely chopped onion and sauté until golden brown, about 8-10 minutes, stirring occasionally.
  4. Add ginger-garlic and chilies: Stir in the remaining 1 tablespoon ginger-garlic paste and the rest of the chopped green chilies. Sauté for 1-2 minutes until the raw smell disappears.
  5. Toast spices: Reduce heat to low, add turmeric powder and coriander powder. Sauté for 30 seconds, adding a splash of water if the spices start to stick.
  6. Add chicken: Add the marinated chicken to the pan. Increase heat to medium-high and sear the chicken for 5-7 minutes, stirring occasionally, until it changes color.
  7. Simmer: Cover the pan, reduce heat to low, and let the chicken cook in its own juices for 15-20 minutes, or until tender, stirring occasionally. If the gravy becomes too thick, add a little water.
  8. Finish: Stir in the garam masala and half of the fresh chopped cilantro. Cook for another 2 minutes.
  9. Garnish and serve: Remove from heat. Garnish with the remaining fresh cilantro and a squeeze of fresh lemon juice. Serve hot with naan, roti, or steamed basmati rice.

Storage & Freezer Guide

Make it last
Refrigerator 3-4 days

Store leftover Hari Mirch Chicken in an airtight container in the refrigerator.

Freezer Up to 3 months

For longer storage, transfer cooled chicken to a freezer-safe container. Thaw overnight in the refrigerator before reheating.

Reheat Stovetop/Microwave

Reheat on the stovetop over medium heat, adding a splash of water if needed, until heated through. Alternatively, microwave in a covered dish, stirring halfway.

Chef’s Corner

  • Adjust the amount of green chilies according to your preferred spice level. For milder heat, you can deseed some of the chilies.
  • For a deeper flavor, marinate the chicken for at least 2 hours or even overnight in the refrigerator.
  • A pinch of kasuri methi (dried fenugreek leaves), crushed between your palms and added at the very end, can enhance the aroma and authenticity of the dish.
