  1. Heat oil or ghee in a heavy-bottomed pan or pot over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and sauté until golden brown, about 7-10 minutes.
  3. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  4. Add the pureed or chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook, stirring occasionally, until the oil separates from the masala, about 5-7 minutes.
  5. Add the diced potatoes and green peas to the pan. Mix well to coat them with the masala.
  6. Pour in the hot water, add salt to taste, and bring the mixture to a simmer. Cover the pan and cook for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
  7. Stir in the garam masala and cook for another 2-3 minutes, allowing the flavors to meld.
  8. Garnish with fresh chopped coriander leaves and serve hot with roti, naan, or rice.
