  1. Marinate the chicken: In a bowl, combine chicken pieces with 1 tbsp ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, salt, and yogurt (if using). Mix well and let it marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
  2. Heat oil or ghee in a large pan or Dutch oven over medium heat. Add chopped onions and sauté until golden brown, about 8-10 minutes.
  3. Add the remaining 2 tbsp ginger-garlic paste and green chilies. Sauté for 1-2 minutes until fragrant.
  4. Stir in the tomato puree/chopped tomatoes. Cook, stirring occasionally, until the oil separates from the masala, about 5-7 minutes.
  5. Add the marinated chicken to the pan. Increase heat to medium-high and sear the chicken for 5-7 minutes, stirring frequently, until it changes color.
  6. Pour in 1/2 cup water or chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until chicken is tender and cooked through.
  7. Uncover, stir in garam masala and kasuri methi (if using). Cook for another 2-3 minutes to thicken the gravy to your desired consistency.
  8. Garnish with fresh cilantro and serve hot with rice, naan, or roti.
