Method

Step-by-step
  1. Wash the basmati rice thoroughly and soak it in water for 20-30 minutes. Drain well before cooking.
  2. Heat ghee in a pressure cooker or a heavy-bottomed pot over medium heat.
  3. Add whole spices (cloves, cardamom, cinnamon, bay leaf) and cashew nuts (if using). Sauté until cashews turn light golden and spices are fragrant.
  4. Add the sliced onions, green chilies, and grated ginger. Sauté until the onions turn translucent and slightly golden.
  5. Add the drained rice to the cooker/pot and gently sauté for 1-2 minutes, ensuring the rice grains are coated with ghee.
  6. Pour in the water and add salt to taste. Stir gently once.
  7. If using a pressure cooker: Close the lid and cook for 2 whistles on medium flame. Let the pressure release naturally.
  8. If using a pot: Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15-18 minutes, or until all water is absorbed and rice is cooked. Do not lift the lid during cooking.
  9. Once cooked, let it rest for 5 minutes (if using a pot). Gently fluff the rice with a fork.
  10. Garnish with fresh chopped coriander leaves and serve hot.

Storage & Freezer Guide

Make it last
Refrigerator 3-4 days

Store cooled Ghee Rice in an airtight container. Ensure it’s not left at room temperature for extended periods to prevent bacterial growth.

Freezer Up to 1 month

Cool completely, then transfer to freezer-safe bags or containers. Thaw overnight in the refrigerator before reheating.

Reheat Stovetop/Microwave

To reheat, sprinkle a tablespoon of water over the rice, cover, and warm until thoroughly heated through. Use a pan on low heat for stovetop or short bursts in the microwave.

Chef’s Corner

  • Soaking the rice is crucial for fluffy, separate grains. Don’t over-soak, or it might become mushy. Drain thoroughly before cooking.
  • Adjust the amount of green chilies to your preferred spice level. For a milder version, you can remove the seeds or reduce the quantity.
  • Using good quality ghee makes a significant difference in the aroma and flavor of the dish. Don’t over-stir the rice after adding water to prevent breaking the grains.
