  1. In a large bowl, combine sliced chicken/steak with 1 tbsp olive oil, lime juice, and fajita seasoning. Marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
  2. Heat the remaining 1 tbsp olive oil in a large skillet or cast-iron pan over medium-high heat.
  3. Add the sliced bell peppers and onions to the hot skillet. Sauté for 5-7 minutes until tender-crisp and slightly charred. Remove vegetables from the skillet and set aside.
  4. Increase heat to high. Add the marinated chicken/steak to the skillet in a single layer (cook in batches if necessary to avoid overcrowding). Cook for 3-5 minutes per side, or until cooked through and nicely seared.
  5. Return the cooked vegetables to the skillet with the meat. Toss everything together to combine and heat through for 1-2 minutes.
  6. Warm the tortillas according to package directions (microwave, oven, or dry skillet).
