Step-by-step- In a large bowl, combine sliced chicken/steak with 1 tbsp olive oil, lime juice, and fajita seasoning. Marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
- Heat the remaining 1 tbsp olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add the sliced bell peppers and onions to the hot skillet. Sauté for 5-7 minutes until tender-crisp and slightly charred. Remove vegetables from the skillet and set aside.
- Increase heat to high. Add the marinated chicken/steak to the skillet in a single layer (cook in batches if necessary to avoid overcrowding). Cook for 3-5 minutes per side, or until cooked through and nicely seared.
- Return the cooked vegetables to the skillet with the meat. Toss everything together to combine and heat through for 1-2 minutes.
- Warm the tortillas according to package directions (microwave, oven, or dry skillet).
- Serve the sizzling fajita mixture immediately with warm tortillas and your favorite toppings.

Freezer Up to 2 months
Freeze cooked fajita filling (meat and vegetables) in a freezer-safe bag or container. Thaw overnight in the refrigerator before reheating.
Reheat Stovetop/Microwave
Reheat filling in a skillet over medium heat until warmed through, or microwave in short bursts. Warm tortillas separately.
Chef’s Corner
- Don’t overcrowd the pan when cooking the meat; this ensures a good sear instead of steaming. Cook in batches if needed.
- For extra flavor, use a cast-iron skillet to get that authentic sizzle and char.
- Warm your tortillas just before serving to make them pliable and delicious.
- Customize your seasoning! Add a pinch of cayenne for heat or smoked paprika for a deeper flavor.
