Step-by-step- Prepare the filling: In a large bowl, combine ground pork, chopped Napa cabbage, minced ginger, chopped green onions, light soy sauce, rice wine vinegar, sesame oil, white pepper, sugar, and cornstarch (if using). Mix well until all ingredients are evenly distributed and the mixture becomes slightly sticky.
- Assemble the dumplings: Take one dumpling wrapper and place about 1 teaspoon of filling in the center. Dip your finger in water and moisten the edges of half of the wrapper. Fold the wrapper in half to create a half-moon shape, pressing the edges firmly to seal. You can create pleats along the sealed edge for a traditional look, or simply press firmly.
- Cook the dumplings (Boiling Method): Bring a large pot of water to a rolling boil. Carefully drop the dumplings into the boiling water, making sure not to overcrowd the pot. Stir gently to prevent sticking. Once the water returns to a boil, add 1/2 cup of cold water. Repeat this process two more times. The dumplings are cooked when they float to the surface and are plump, about 8-10 minutes total.
- Cook the dumplings (Pan-Frying Method, Potstickers): Heat 1 tablespoon of cooking oil in a large non-stick skillet over medium-high heat. Place the dumplings in a single layer, flat side down, and cook for 2-3 minutes until the bottoms are golden brown. Add 1/2 cup of water to the skillet, immediately cover with a lid, and steam for 6-8 minutes, or until the water has evaporated and the pork is cooked through.
- Prepare the dipping sauce: In a small bowl, whisk together light soy sauce, rice wine vinegar, chili oil (if using), and minced garlic.
- Serve immediately with the dipping sauce.

Storage & Freezer Guide
Make it last Refrigerator 3-4 days
Store cooked dumplings in an airtight container. Reheat thoroughly before serving.
Freezer Up to 3 months
To freeze uncooked dumplings, arrange them in a single layer on a parchment-lined baking sheet and flash freeze until solid (about 1-2 hours). Transfer to a freezer-safe bag or container. Cook from frozen, adding a few extra minutes to the cooking time.
Reheat Stovetop/Microwave
Reheat cooked dumplings by pan-frying until crispy, steaming, or microwaving until heated through. For best texture, pan-frying or steaming is recommended.
Chef’s Corner
- Do not overfill the wrappers, as this makes them difficult to seal and prone to breaking during cooking.
- For extra tender filling, you can add a tablespoon of cold water or chicken broth to the pork mixture and mix vigorously until absorbed.
- Experiment with different pleating techniques to create beautiful dumplings. There are many tutorials online for various styles.
- If you can’t find round dumpling wrappers, square wonton wrappers can be used by trimming the corners or folding them into triangles.
