Coriander Rice

Step-by-step- Wash the rice thoroughly and cook it with 2 cups of water (or as per your rice cooker instructions) until fluffy. Let it cool completely and separate the grains.
- In a blender, combine fresh coriander leaves, mint leaves (if using), grated coconut, green chilies, ginger, and garlic (if using) with a splash of water to make a smooth paste.
- Heat oil or ghee in a large pan or kadai over medium heat. Add mustard seeds, and once they splutter, add cumin seeds, chana dal, and urad dal. Sauté until the dals turn golden brown.
- Add chopped onions and curry leaves to the pan. Sauté until the onions turn translucent.
- Add the prepared coriander paste to the pan and cook for 5-7 minutes, stirring occasionally, until the raw smell disappears and the paste thickens slightly.
- Add the cooked and cooled rice to the pan. Gently mix everything until the rice is evenly coated with the coriander masala.
- Season with salt to taste and lemon juice. Continue to cook on low heat for another 2-3 minutes, stirring gently, to allow the flavors to meld.
- Serve hot with raita, papad, or your favorite South Indian curry.
