Method

Step-by-step
  1. Preheat your oven to 350°F (175°C). Lightly grease and flour an 8×8 inch square baking pan or a 9-inch round cake pan.
  2. Prepare the streusel topping: In a small bowl, combine ½ cup flour, brown sugar, and cinnamon. Pour in the melted butter and mix with a fork until a crumbly mixture forms. Set aside.
  3. In a medium bowl, whisk together 1 ½ cups flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix on low speed until just combined, being careful not to overmix.
  6. Pour the cake batter into the prepared baking pan and spread evenly. Sprinkle the prepared streusel topping evenly over the batter.
  7. Bake for 30-35 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
  8. Allow the coffee cake to cool in the pan on a wire rack for at least 15 minutes before slicing and serving.

Storage & Freezer Guide

Make it last
Room Temperature 2 days

Store in an airtight container to keep it fresh and moist.

Refrigerator 3-4 days

For longer storage, keep in an airtight container in the fridge. Allow to come to room temperature before serving for best texture.

Freezer Up to 3 months

Wrap individual slices or the entire cooled cake tightly in plastic wrap, then in aluminum foil. Thaw overnight in the refrigerator or at room temperature.

Reheat Oven/Microwave

Reheat individual slices in the microwave for 15-30 seconds, or in a toaster oven at 300°F (150°C) for 5-10 minutes until warmed through.

Chef’s Corner

  • Do not overmix the batter! Overmixing develops gluten, which can lead to a tough, dense cake. Mix until just combined.
  • For an extra moist cake, ensure your egg, butter, and sour cream are at room temperature before you start mixing. This helps them emulsify better.
  • Elevate your streusel: Add a handful of chopped pecans or walnuts to the streusel for an added layer of crunch and nutty flavor.
