Cilantro Lime Rice

Step-by-step- Rinse the Basmati rice thoroughly under cold water until the water runs clear; set aside to drain.
- In a medium saucepan or pot, heat olive oil or ghee over medium heat. Add cumin seeds and let them splutter for a few seconds.
- Add the finely chopped onion and green chili (if using) to the pot. Sauté until the onion turns translucent, about 5-7 minutes.
- Stir in the turmeric powder (if using) and the drained Basmati rice. Toast the rice gently for 1-2 minutes, stirring constantly.
- Pour in the water or vegetable broth and add salt to taste. Bring the mixture to a rolling boil.
- Once boiling, reduce the heat to low, cover the pot tightly, and let it simmer for 15-18 minutes, or until all the liquid is absorbed and the rice is tender.
- Remove the pot from heat and let it rest, covered, for 5 minutes without lifting the lid. This allows the steam to finish cooking the rice evenly.
- Gently fluff the rice with a fork. Stir in the fresh chopped cilantro and lime juice until well combined.
- Taste and adjust salt or lime juice if needed before serving.
