  1. Cook Chow Mein noodles according to package directions until al dente. Drain well, rinse with cold water, and toss with 1 tbsp sesame oil to prevent sticking. Set aside.
  2. In a small bowl, whisk together low-sodium soy sauce, dark soy sauce, vegetarian mushroom sauce, sugar, white pepper, cornstarch, and vegetable broth to create the sauce. Set aside.
  3. Heat the remaining 1 tbsp sesame oil in a large wok or skillet over medium-high heat. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
  4. Add julienned carrot, shredded cabbage, sliced red bell pepper, snap peas, and sliced mushrooms. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Add the cooked noodles and the white parts of the green onions to the wok. Pour the prepared sauce over the noodles and vegetables. Toss everything together vigorously for 2-3 minutes until the noodles are evenly coated and the sauce has thickened.
  6. Stir in the green parts of the sliced green onions. Serve immediately, garnished with toasted sesame seeds if desired.
