  1. Heat ghee or oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
  2. Add minced garlic, grated ginger, and green chili (if using). Cook for 1-2 minutes until fragrant.
  3. Stir in ground cumin, ground coriander, turmeric powder, and garam masala. Cook for another minute, stirring constantly, until aromatic.
  4. Add the chicken pieces to the pot and cook until lightly browned on all sides, about 5-7 minutes. This helps seal in the juices and flavor.
  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
  6. Add the mixed vegetables to the soup. If using coconut milk, stir it in now. Continue to simmer for another 5-7 minutes, until the vegetables are tender-crisp.
  7. Season the soup with salt and freshly ground black pepper to taste. Remove the green chili if you prefer less heat.
  8. Ladle the hot soup into bowls, garnish generously with fresh cilantro, and serve with lemon wedges on the side for a bright finish.
