Step-by-step- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
- Add onion, carrots, and celery to the pot. Sauté for 5-7 minutes, until vegetables begin to soften. Add minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth, then add dried thyme, dried rosemary, and the bay leaf. Bring the mixture to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes to allow flavors to meld.
- Return the cooked chicken to the pot. Add the egg noodles and cook according to package directions, typically 7-10 minutes, or until the noodles are tender.
- Remove the bay leaf. Stir in fresh parsley. Season with salt and freshly ground black pepper to taste. Serve hot and enjoy!
