Indian Chicken Noodle Soup
A comforting and aromatic Indian-spiced twist on the classic chicken noodle soup.

Step-by-step- Heat oil or ghee in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Stir in minced garlic, grated ginger, and green chilies (if using). Cook for 1-2 minutes until fragrant.
- Add the chicken pieces to the pot and cook, stirring occasionally, until lightly browned on all sides, about 5-7 minutes.
- Sprinkle in turmeric, cumin, coriander, garam masala, and black pepper. Stir well to coat the chicken and cook for 1 minute until fragrant.
- Pour in the chicken broth, add diced carrots and celery. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until vegetables are tender.
- Add the egg noodles to the pot and cook according to package directions, usually 5-7 minutes, or until al dente. Ensure the chicken is cooked through.
- Taste and adjust salt as needed. Ladle the hot soup into bowls, garnish generously with fresh cilantro, and serve immediately with lime wedges on the side.

Store leftover soup in an airtight container in the refrigerator. The noodles may absorb more liquid and soften over time.
Freezer Up to 2 months
For best results, freeze the soup without the noodles. Cook noodles fresh when reheating. If freezing with noodles, they may become very soft upon thawing and reheating. Store in freezer-safe containers, leaving some headspace.
Reheat Stovetop/Microwave
Reheat gently on the stovetop over medium-low heat until warmed through, adding a splash of broth if needed. Alternatively, microwave in short intervals, stirring occasionally.

- For an extra layer of flavor, use homemade chicken broth.
- Adjust the spice level by increasing or decreasing green chilies and black pepper. A pinch of red chili powder can also be added for more heat.
- To prevent soggy noodles, you can cook them separately and add them to individual bowls just before serving.
