  1. Heat oil or ghee in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
  2. Stir in minced garlic, grated ginger, and green chilies (if using). Cook for 1-2 minutes until fragrant.
  3. Add the chicken pieces to the pot and cook, stirring occasionally, until lightly browned on all sides, about 5-7 minutes.
  4. Sprinkle in turmeric, cumin, coriander, garam masala, and black pepper. Stir well to coat the chicken and cook for 1 minute until fragrant.
  5. Pour in the chicken broth, add diced carrots and celery. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until vegetables are tender.
  6. Add the egg noodles to the pot and cook according to package directions, usually 5-7 minutes, or until al dente. Ensure the chicken is cooked through.
