  1. Prepare the chicken: Marinate chicken pieces with a pinch of salt, black pepper, and 1/2 tsp red chili powder for at least 10 minutes.
  2. Heat 1 tbsp oil in a large wok or pan over medium-high heat. Add the marinated chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from the pan and set aside.
  3. Add the remaining 1 tbsp oil to the same pan. Once hot, add cumin seeds and let them splutter. Add chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in ginger-garlic paste and green chili (if using), cooking for 1 minute until fragrant.
  5. Add diced carrots, green beans, and bell pepper. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  6. Add turmeric powder, remaining red chili powder, and garam masala. Cook for 1 minute, stirring constantly, to toast the spices.
  7. Return the cooked chicken to the pan. Add frozen peas and cooked Basmati rice. Gently toss to combine all ingredients.
  8. Pour in soy sauce and chili sauce. Season with salt (remember soy sauce is salty) and black pepper. Continue to stir-fry for another 3-5 minutes, ensuring the rice is heated through and flavors are well distributed.
