Chicken Adraki
Aromatic and warming, this classic Indian chicken curry is packed with the vibrant flavor of ginger.

Step-by-step- In a bowl, combine chicken pieces with yogurt (if using), 1 tbsp ginger-garlic paste, 1/2 tsp red chili powder, 1/4 tsp turmeric powder, 1/2 tsp garam masala, and salt. Mix well and marinate for at least 30 minutes, or ideally 2-4 hours in the refrigerator.
- Heat ghee or oil in a large heavy-bottomed pan or Dutch oven over medium heat. Add the chopped onions and sauté until golden brown, about 8-10 minutes.
- Add the remaining 1 tbsp ginger-garlic paste and half of the julienned ginger. Sauté for 1-2 minutes until fragrant.
- Stir in the pureed tomatoes, remaining red chili powder, turmeric powder, cumin powder, and coriander powder. Cook, stirring occasionally, until the oil separates from the masala, about 7-10 minutes.
- Add the marinated chicken to the pan and cook for 5-7 minutes, stirring frequently, until the chicken is lightly seared on all sides.
- Pour in the water or chicken broth, bring to a simmer, then cover and cook on low heat for 15-20 minutes, or until the chicken is tender and cooked through.
- Uncover, stir in the remaining garam masala, and adjust salt if needed. Simmer for another 2-3 minutes to thicken the gravy slightly.
- Garnish with the remaining julienned ginger and fresh cilantro before serving hot with rice or naan.
