Step-by-step
  1. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  2. Add urad dal, asafoetida, curry leaves, and dried red chilies. Sauté until the dal turns light golden.
  3. Add grated ginger and minced garlic. Sauté for 1 minute until fragrant.
  4. If using, add chopped onion and sauté until translucent.
  5. Add grated carrots and turmeric powder. Mix well and cook for 5-7 minutes, stirring occasionally, until carrots soften slightly.
  6. Add jaggery (or brown sugar), tamarind paste, and salt. Mix thoroughly.
  7. Continue to cook for another 8-10 minutes, stirring occasionally, allowing the flavors to meld and the chutney to thicken. If it becomes too dry, add a splash of water.
  8. Taste and adjust sweetness, tanginess, or spice as needed.
  9. Remove from heat and let it cool slightly before serving.
