Method

Step-by-step
  1. Heat coconut oil in a large pan or kadai over medium heat. Add mustard seeds and let them splutter.
  2. Add urad dal (if using) and curry leaves, frying until the dal turns light golden.
  3. Add chopped onion, green chilies, and grated ginger (if using). Sauté until the onions turn translucent.
  4. Stir in turmeric powder and a pinch of asafoetida (if using). Cook for 30 seconds until fragrant.
  5. Add the finely shredded cabbage and salt to taste. Mix well, cover, and cook on medium-low heat for 8-10 minutes, stirring occasionally, until the cabbage is tender-crisp. Avoid overcooking to retain its texture.
  6. Once the cabbage is cooked to your liking, stir in the fresh grated coconut. Cook for another 2-3 minutes, allowing the flavors to meld.
  7. Serve hot as a delicious side dish with rice, roti, or parathas.

Storage & Freezer Guide

Make it last
Refrigerator 3-4 days

Store cooled Cabbage Thoran in an airtight container in the refrigerator to maintain freshness.

Freezer Up to 1 month

While not ideal for texture, Thoran can be frozen in a freezer-safe container. Note that cabbage may become slightly watery upon thawing.

Reheat Stovetop/Microwave

Reheat gently on the stovetop over low heat, adding a splash of water if needed, or in the microwave until warmed through. Stir frequently to ensure even heating.

Chef’s Corner

  • For the best texture, ensure your cabbage is finely shredded. A mandoline slicer or food processor with a slicing disk can make this task easier and more consistent.
  • Do not overcook the cabbage; it should remain tender-crisp. Overcooked cabbage can become mushy and lose its vibrant color and flavor.
  • Freshly grated coconut makes a significant difference in taste compared to desiccated coconut. If using desiccated, rehydrate it slightly with warm water before adding to the pan.
