Hearty Bean & Rice Burritos

Step-by-step- Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and bell peppers, sautéing until softened, about 5-7 minutes.
- Stir in minced garlic, chili powder, cumin, and smoked paprika. Cook for another minute until fragrant.
- Add rinsed black beans, pinto beans, cooked rice, corn, and drained diced tomatoes to the skillet. Mix well and cook for 10-15 minutes, stirring occasionally, until heated through and flavors have melded. Season with salt and pepper to taste.
- Remove from heat and stir in fresh cilantro. If using, stir in shredded cheese until melted.
- Warm tortillas in a dry skillet, microwave, or oven according to package directions until pliable. This prevents tearing.
- Lay out a warm tortilla, spoon about 1/2 to 3/4 cup of the bean and rice mixture into the center. Fold in the sides, then fold up the bottom and roll tightly to form a burrito. Repeat with remaining tortillas and filling.
- Serve immediately with desired toppings like salsa, sour cream, or guacamole.
