  1. Heat ghee or oil in a heavy-bottomed pot or pressure cooker over medium heat. Add the whole spices (bay leaves, cardamom, cloves, cinnamon, fennel seeds) and sauté until fragrant, about 30 seconds.
  2. Add the sliced onions and cook until golden brown, stirring occasionally. This can take 8-10 minutes.
  3. Stir in the grated ginger, minced garlic, and slit green chilies. Sauté for another 2 minutes until the raw smell disappears.
  4. Add the chopped mixed vegetables, turmeric powder, red chili powder (if using), and garam masala. Cook for 3-5 minutes, allowing the spices to coat the vegetables.
  5. Add the soaked and drained Basmati rice to the pot. Gently mix with the vegetables and spices for 2 minutes, ensuring not to break the rice grains.
  6. Pour in the water or vegetable broth, coconut milk (if using), and salt to taste. Bring the mixture to a boil.
  7. Reduce heat to low, cover the pot tightly, and let it simmer for 15-20 minutes, or until all the water is absorbed and the rice is cooked through. If using a pressure cooker, cook for 1 whistle on medium heat, then let the pressure release naturally.
  8. Once cooked, turn off the heat and let the rice rest, covered, for 5-10 minutes. This allows the flavors to meld and the rice to firm up.
  9. Gently fluff the Brinji Rice with a fork. Stir in the chopped mint and coriander leaves before serving hot.
