Method

Step-by-step
  1. Wash and soak Basmati rice for 30 minutes. Drain and set aside.
  2. Heat oil or ghee in a large pot. Add whole spices and sauté until fragrant. Add sliced onion and fry until golden brown. Remove half of the fried onions for garnish.
  3. Add ginger-garlic paste and green chilies to the remaining onions and sauté for a minute. Add chopped tomatoes and cook until soft and oil separates.
  4. Stir in red chili powder, turmeric, garam masala, and biryani masala. Cook for 1-2 minutes until aromatic.
  5. Add the mixed vegetables and salt. If using, add yogurt and mix well. Cover and cook on medium heat for 10-12 minutes, or until vegetables are partially cooked (al dente).
  6. In a separate large pot, bring water to a rolling boil with salt. Add the soaked Basmati rice and cook until 70-80% done. Drain immediately.
  7. Layer the biryani: Spread half of the partially cooked rice over the vegetable curry. Sprinkle with saffron milk, some fried onions, and fresh mint/coriander. Add the remaining rice on top.
  8. Drizzle with 1 tbsp ghee, sprinkle the remaining fried onions, and fresh mint/coriander. Cover the pot tightly with a lid or seal with dough.
  9. Cook on low heat (dum cooking) for 15-20 minutes. Let it rest for 10 minutes before opening.
  10. Gently fluff the biryani with a fork and serve hot with raita and salad.
