  1. In a dry pan over medium-low heat, gently toast the whole spices: green cardamom, black cardamom, cinnamon, cloves, black peppercorns, nutmeg, bay leaves, star anise, mace (if using), cumin seeds, coriander seeds, and fennel seeds. Toast for 3-5 minutes until fragrant, being careful not to burn them.
  2. Remove the toasted spices from the pan and spread them on a plate to cool completely. This prevents them from clumping during grinding and preserves their aroma.
  3. Once cooled, transfer the toasted whole spices to a spice grinder or a powerful blender. Add the turmeric powder, red chili powder, ginger powder, garlic powder (if using), and dried rose petals (if using).
  4. Grind the mixture into a very fine powder. For an extra smooth texture, you may sift the masala and re-grind any coarse particles.
  5. Transfer the freshly ground Biryani Masala to a clean, dry airtight container. Store in a cool, dark place.
