Step-by-step- In a dry pan over medium-low heat, gently toast the whole spices: green cardamom, black cardamom, cinnamon, cloves, black peppercorns, nutmeg, bay leaves, star anise, mace (if using), cumin seeds, coriander seeds, and fennel seeds. Toast for 3-5 minutes until fragrant, being careful not to burn them.
- Remove the toasted spices from the pan and spread them on a plate to cool completely. This prevents them from clumping during grinding and preserves their aroma.
- Once cooled, transfer the toasted whole spices to a spice grinder or a powerful blender. Add the turmeric powder, red chili powder, ginger powder, garlic powder (if using), and dried rose petals (if using).
- Grind the mixture into a very fine powder. For an extra smooth texture, you may sift the masala and re-grind any coarse particles.
- Transfer the freshly ground Biryani Masala to a clean, dry airtight container. Store in a cool, dark place.

Storage & Freezer Guide
Make it last Refrigerator Not recommended
Storing dry spices in the refrigerator can introduce moisture and condensation, which degrades flavor and reduces shelf life. It’s best kept in a pantry.
Freezer Not recommended
Freezing dry spices can lead to moisture absorption upon thawing, affecting the aroma and potency. It’s generally unnecessary for dry blends.
Reheat N/A
This is a dry spice blend, not a cooked dish, and therefore does not require reheating. Use directly in your recipes.
Chef’s Corner
- Always toast whole spices on low heat until just fragrant, not burnt, to bring out their essential oils and prevent bitterness.
- Ensure your spice grinder is completely dry before use to prevent clumping and prolong the masala’s shelf life.
- For maximum freshness, make smaller batches more frequently. The aroma and flavor of freshly ground spices are unparalleled.
- Adjust the amount of red chili powder to suit your preferred spice level, or use Kashmiri chili for color with less heat.
