Step-by-step- Soak almonds in hot water for 30 minutes, or overnight in cold water. Drain and peel the skins. This step is crucial for a smooth texture.
- Blend the peeled almonds with 1/2 cup of the whole milk until a very smooth, fine paste is formed. Ensure there are no coarse almond pieces.
- In a heavy-bottomed pan, bring the remaining 3.5 cups of milk to a gentle boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.
- Reduce the heat to low, then add the prepared almond paste, granulated sugar, the saffron-infused milk, and cardamom powder to the pan. Stir everything well to combine.
- Simmer the milk mixture for 20-25 minutes, stirring frequently, until it thickens slightly and the flavors have fully melded. The color should also deepen due to the saffron.
- Remove from heat and let the Badam Milk cool down to room temperature. It will thicken further as it cools.
- Serve chilled or warm, garnished with chopped pistachios if desired. Enjoy this traditional Indian beverage!
