  1. Soak almonds in hot water for 30 minutes, or overnight in cold water. Drain and peel the skins. This step is crucial for a smooth texture.
  2. Blend the peeled almonds with 1/2 cup of the whole milk until a very smooth, fine paste is formed. Ensure there are no coarse almond pieces.
  3. In a heavy-bottomed pan, bring the remaining 3.5 cups of milk to a gentle boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.
  4. Reduce the heat to low, then add the prepared almond paste, granulated sugar, the saffron-infused milk, and cardamom powder to the pan. Stir everything well to combine.
  5. Simmer the milk mixture for 20-25 minutes, stirring frequently, until it thickens slightly and the flavors have fully melded. The color should also deepen due to the saffron.
  6. Remove from heat and let the Badam Milk cool down to room temperature. It will thicken further as it cools.
  7. Serve chilled or warm, garnished with chopped pistachios if desired. Enjoy this traditional Indian beverage!
