Step-by-step- Heat vegetable oil in a heavy-bottomed pan or Dutch oven over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds. Sauté until the mustard seeds begin to pop.
- Add the chopped onion and cook until translucent, about 5-7 minutes. Stir in the grated ginger and minced garlic, cooking for another minute until fragrant.
- Add the diced apples, brown sugar, apple cider vinegar, raisins (if using), red chili powder, turmeric powder, garam masala, and salt to the pan. Mix well.
- Bring the mixture to a gentle boil, then reduce the heat to low. Simmer uncovered for 25-30 minutes, stirring occasionally, until the apples are tender and the chutney has thickened to a jam-like consistency.
- Taste and adjust seasoning if necessary. If you prefer a smoother chutney, you can mash some of the apples with the back of a spoon.

Reheat small portions gently on the stovetop over low heat, stirring occasionally, or in the microwave in short bursts until warmed through. Add a splash of water if it’s too thick.
