- Heat oil in a large pan or kadai over medium heat; add curry leaves and green chilies, sauté for a minute.
- Add chopped onions and cook until they turn golden brown, about 8-10 minutes.
- Stir in ginger-garlic paste and sauté until the raw smell disappears, about 2-3 minutes.
- Add red chili powder, coriander powder, cumin powder, and garam masala; cook for 1-2 minutes until fragrant, adding a splash of water if spices stick.
- Add the marinated chicken pieces to the pan and mix well to coat with the spice mixture.
- Cover the pan and cook on medium-low heat for 15-20 minutes, stirring occasionally, until chicken releases its juices and is half-cooked.
- Remove the lid, increase heat to medium-high, and cook, stirring frequently, until all the moisture evaporates and the chicken is well-fried and browned.
