  1. In a large bowl, combine the mashed potatoes, boiled peas (if using), cornstarch/rice flour, chopped onion, green chilies, grated ginger, chopped coriander leaves, cumin powder, red chili powder, garam masala, and salt.
  2. Mix everything thoroughly until a cohesive dough forms. Ensure there are no large lumps of potato.
  3. Divide the mixture into 8-10 equal portions. Shape each portion into a flat, round patty (tikki) about 1/2 inch thick.
  4. Preheat your air fryer to 375°F (190°C) for 5 minutes.
  5. Lightly brush or spray the tikkis with oil on both sides. Arrange them in a single layer in the air fryer basket, ensuring not to overcrowd. You may need to cook in batches.
  6. Air fry for 12-15 minutes, flipping halfway through, until they are golden brown and crispy on both sides. Cooking time may vary depending on your air fryer model.
  7. Remove the Aloo Tikki from the air fryer and serve hot with mint chutney, tamarind chutney, or yogurt. Sprinkle with chaat masala if desired.
