Step-by-step- In a large bowl, combine the mashed potatoes, mashed green peas (if using), chopped green chilies, grated ginger, chopped coriander leaves, cumin powder, red chili powder, garam masala, dry mango powder, and salt.
- Mix all ingredients thoroughly until well combined. Add breadcrumbs or cornflour gradually, mixing until the mixture comes together and is easy to shape.
- Divide the mixture into 8-10 equal portions and flatten them into round or oval patties, about 1/2 inch thick.
- Heat oil in a non-stick pan over medium heat. Once hot, carefully place the tikkis in the pan, ensuring not to overcrowd it.
- Shallow fry the tikkis for 3-5 minutes on each side, or until they turn golden brown and crispy.
- Remove the Aloo Tikki from the pan and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with mint chutney, tamarind chutney, or yogurt.

For best results, reheat on a lightly oiled pan over medium heat until crispy, or in an oven/air fryer at 350°F (175°C) for 8-10 minutes.
