Step-by-step- Lightly toast the chopped almonds in a dry pan over medium heat for 2-3 minutes until fragrant. Be careful not to burn them. Set aside to cool.
- In the same pan, add the ghee. Once melted, add the pitted dates and cook on low heat, mashing them with a spoon, until they soften and form a sticky, dough-like mass (about 5-7 minutes).
- Remove the pan from heat. Stir in the toasted almonds and cardamom powder. Mix well until all ingredients are evenly combined.
- While the mixture is still warm and pliable, transfer it to a clean surface or a piece of parchment paper. Using your hands (grease them lightly with ghee if too sticky), shape the mixture into a log or cylindrical roll, about 1.5-2 inches in diameter.
- In a shallow plate, combine the desiccated coconut and poppy seeds. Roll the date log in this mixture, pressing gently to coat it evenly on all sides.
- Wrap the coated roll tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes to an hour, or until it becomes firm.
- Once firm, unwrap the roll and slice it into 1/2-inch thick discs. Serve immediately or store for later.
