Air Fryer Vegetable Cutlet

Step-by-step- Steam or boil the mixed vegetables until tender. Drain them thoroughly and mash lightly. Ensure no excess water remains.
- In a large bowl, combine the mashed potatoes, mashed mixed vegetables, finely chopped onion, ginger-garlic paste, green chilies, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, chopped coriander leaves, and salt.
- Add 1/2 cup breadcrumbs to the mixture and mix everything thoroughly until a well-combined, dough-like consistency is formed. If the mixture feels too wet, add a little more breadcrumbs.
- Divide the mixture into equal portions (about 1.5-2 tablespoons each) and shape them into desired cutlet forms (round, oval, or heart-shaped).
- Place the remaining breadcrumbs in a shallow plate. Gently roll each cutlet in the breadcrumbs, ensuring an even coating on all sides.
- Preheat your air fryer to 375°F (190°C) for 5 minutes.
- Lightly spray the air fryer basket with oil. Arrange the cutlets in a single layer, ensuring not to overcrowd the basket. Lightly spray the tops of the cutlets with oil.
- Air fry for 15-20 minutes, flipping them halfway through and spraying again if needed, until they are golden brown and crispy. Cook in batches if necessary.
- Serve the Air Fryer Vegetable Cutlets hot with mint chutney, ketchup, or tamarind chutney.

Reheat Air Fryer/Oven
Reheat cooked cutlets in the air fryer at 350°F (175°C) for 5-7 minutes, or until heated through and crispy. Can also be reheated in a conventional oven.
