Method

Step-by-step
  1. Steam or boil the mixed vegetables until tender. Drain them thoroughly and mash lightly. Ensure no excess water remains.
  2. In a large bowl, combine the mashed potatoes, mashed mixed vegetables, finely chopped onion, ginger-garlic paste, green chilies, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, chopped coriander leaves, and salt.
  3. Add 1/2 cup breadcrumbs to the mixture and mix everything thoroughly until a well-combined, dough-like consistency is formed. If the mixture feels too wet, add a little more breadcrumbs.
  4. Divide the mixture into equal portions (about 1.5-2 tablespoons each) and shape them into desired cutlet forms (round, oval, or heart-shaped).
  5. Place the remaining breadcrumbs in a shallow plate. Gently roll each cutlet in the breadcrumbs, ensuring an even coating on all sides.
  6. Preheat your air fryer to 375°F (190°C) for 5 minutes.
  7. Lightly spray the air fryer basket with oil. Arrange the cutlets in a single layer, ensuring not to overcrowd the basket. Lightly spray the tops of the cutlets with oil.
  8. Air fry for 15-20 minutes, flipping them halfway through and spraying again if needed, until they are golden brown and crispy. Cook in batches if necessary.
  9. Serve the Air Fryer Vegetable Cutlets hot with mint chutney, ketchup, or tamarind chutney.

Storage & Freezer Guide

Make it last
Refrigerator 3-4 days

Store cooked cutlets in an airtight container in the refrigerator.

Freezer Up to 3 months

To freeze uncooked cutlets, arrange them on a baking sheet and freeze until solid. Transfer to a freezer-safe bag or container. Cook from frozen, adding a few extra minutes to the air frying time.

Reheat Air Fryer/Oven

Reheat cooked cutlets in the air fryer at 350°F (175°C) for 5-7 minutes, or until heated through and crispy. Can also be reheated in a conventional oven.

Chef’s Corner

  • Ensure your vegetables are thoroughly drained and mashed to prevent a soggy cutlet mixture, which can make them difficult to shape and less crispy.
  • For an extra layer of flavor, lightly sauté the chopped onion, ginger-garlic paste, and green chilies before adding them to the mashed vegetable mixture.
  • Experiment with different spice blends! A pinch of chaat masala can add an authentic street-food zing, or try adding a touch of amchur (dry mango powder) for tanginess.
  • To make these gluten-free, substitute regular breadcrumbs with a gluten-free alternative and ensure all other ingredients are certified gluten-free.
