Step-by-step- For the Dough: In a large bowl, combine flour, carom seeds, and salt. Add melted ghee/oil and rub it into the flour until it resembles breadcrumbs. Gradually add cold water, kneading until a firm, smooth dough forms. Cover and let it rest for 20-30 minutes.
- For the Filling: Heat 1 tbsp oil in a pan over medium heat. Add cumin seeds and let them splutter. Add grated ginger and green chili (if using), sauté for 30 seconds.
- Add green peas and cook for 2-3 minutes. Stir in turmeric powder, coriander powder, garam masala, and amchur. Cook for another minute until fragrant.
- Add the mashed potatoes and salt to taste. Mix well, breaking any large potato chunks. Cook for 5-7 minutes, stirring occasionally, until the mixture is well combined and slightly dry. Remove from heat, stir in fresh coriander leaves, and let it cool completely.
- Assemble Samosas: Divide the dough into 8-10 equal portions. Roll each portion into an oval shape, about 6-7 inches long. Cut the oval in half lengthwise to get two semi-circles.
- Take one semi-circle, moisten the straight edge with water. Bring the two straight edges together to form a cone, pressing firmly to seal. Fill the cone with 1-2 tablespoons of the potato filling.
- Moisten the open edges of the cone with water. Pinch and pleat one side, then press the edges together to seal the samosa tightly, forming the classic triangular shape.
- Air Fry: Preheat your air fryer to 350°F (175°C) for 5 minutes. Lightly spray the samosas with oil spray.
- Place samosas in a single layer in the air fryer basket, ensuring not to overcrowd. Air fry for 12-15 minutes, flipping halfway through and spraying again if needed, until golden brown and crispy.
- Serve hot with mint chutney or tamarind chutney.

Freezer Up to 3 months
To freeze uncooked samosas: Place them on a baking sheet and freeze until solid. Transfer to a freezer-safe bag. To air fry from frozen, preheat air fryer to 325°F (160°C) and cook for 20-25 minutes, flipping halfway, until golden and cooked through. To freeze cooked samosas: Let them cool completely, then store in a freezer-safe bag or container. Reheat as above, adding a few extra minutes.

For best crispiness, reheat in an air fryer at 300°F (150°C) for 5-7 minutes. Alternatively, reheat in an oven at 350°F (175°C) for 10-15 minutes.
