Step-by-step- Rinse the fish pieces and pat them thoroughly dry with paper towels. This is crucial for a crispy fry.
- In a large bowl, combine ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, black pepper powder, lemon juice, rice flour (or cornstarch), 2 tbsp oil, and salt.
- Add the dried fish pieces to the marinade and gently toss to ensure each piece is evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
- Preheat your air fryer to 375°F (190°C) for 5 minutes.
- Lightly brush the air fryer basket with oil or spray with a non-stick cooking spray. Arrange the marinated fish pieces in a single layer in the basket, ensuring not to overcrowd. You may need to cook in batches.
- Lightly brush or spray the top of the fish pieces with a little oil.
- Air fry for 8-10 minutes, then carefully flip the fish pieces. Continue to air fry for another 7-10 minutes, or until the fish is golden brown, cooked through, and crispy. Cooking time may vary based on fish thickness and air fryer model.
- Carefully remove the fish fry from the air fryer. Garnish with fresh coriander leaves, if desired, and serve immediately with lemon wedges.

Storage & Freezer Guide
Make it last Refrigerator 1-2 days
Store leftover fish fry in an airtight container. Note that it will lose some crispiness.
Freezer Not recommended
Freezing cooked fish fry is not recommended as it significantly affects texture upon reheating.
Reheat Air Fryer
Reheat in a preheated air fryer at 350°F (175°C) for 5-7 minutes until warmed through and slightly crispy again.
Chef’s Corner
- **Pat Dry Thoroughly:** This is the most important step for crispy fish. Excess moisture will steam the fish instead of frying it.
- **Don’t Overcrowd:** Cook in batches if necessary to allow hot air to circulate properly around each piece, ensuring even cooking and crispiness.
- **Adjust Spices:** Feel free to adjust the amount of red chili powder and other spices to suit your preferred heat level.
- **Rice Flour for Crispiness:** Rice flour or cornstarch in the marinade helps create a lovely, crispy coating without deep frying.
- **Serve Immediately:** Air fryer fish fry is best enjoyed fresh off the air fryer for maximum crispiness.
