Step-by-step
  1. Wash and pat dry the eggplant. Pierce it several times with a fork or knife. Lightly brush or spray with 1 tablespoon of oil.
  2. Preheat your air fryer to 375°F (190°C). Place the eggplant in the air fryer basket and cook for 25-30 minutes, flipping halfway, until it’s very soft and the skin is charred.
  3. Once cooked, carefully remove the eggplant and let it cool slightly. Peel off the skin and mash the flesh with a fork. Discard the stem.
  4. While the eggplant cools, heat the remaining 1 tablespoon of oil in a large pan or kadai over medium heat. Add the chopped onion and sauté until golden brown, about 7-8 minutes.
  5. Add the minced ginger, garlic, and green chilies. Sauté for another 2 minutes until fragrant.
  6. Stir in the chopped tomatoes and cook until they soften and release their juices, about 5-7 minutes.
  7. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook for 2-3 minutes, stirring constantly, until the raw smell of spices disappears and the oil starts to separate.
  8. Add the mashed eggplant to the pan. Mix well, ensuring the eggplant is thoroughly coated with the masala. If using, add frozen peas now.
  9. Cover and simmer for 5-7 minutes, allowing the flavors to meld.
  10. Stir in the garam masala and half of the fresh cilantro. Mix well.
  11. Garnish with the remaining fresh cilantro and serve hot with roti, naan, or rice.
