Step-by-step- Heat ghee or oil in a large pan or Dutch oven over medium heat. Add cumin seeds and bay leaves; let them splutter.
- Add chopped onions and sauté until golden brown, about 8-10 minutes.
- Stir in minced garlic, grated ginger, and green chili (if using). Sauté for another 2 minutes until fragrant.
- Add the minced meat, breaking it up with a spoon. Cook until the meat is browned and all the liquid has evaporated, about 8-10 minutes.
- Stir in turmeric powder, red chili powder, coriander powder, black pepper powder, and salt. Cook for 2-3 minutes, allowing the spices to toast.
- Add the pureed or chopped tomatoes and cook, stirring occasionally, until the oil separates from the masala, about 5-7 minutes.
- Pour in 1/2 cup water or broth, bring to a simmer, then cover and cook on low heat for 15-20 minutes, or until the meat is tender and the flavors have melded. Add fresh peas during the last 5 minutes if using.
- Stir in garam masala and lemon juice (if using). Garnish generously with fresh coriander leaves.
- Serve hot with naan, roti, paratha, or rice.

Storage & Freezer Guide
Make it last Refrigerator 3-4 days
Store in an airtight container once cooled completely. Ensure it’s sealed well to maintain freshness and prevent odor transfer.
Freezer Up to 3 months
Transfer cooled keema masala to freezer-safe containers or bags, removing as much air as possible. Thaw overnight in the refrigerator before reheating.
Reheat Stovetop/Microwave
Reheat on the stovetop over medium-low heat, adding a splash of water if needed, until heated through. Alternatively, microwave in short bursts, stirring occasionally.
Chef’s Corner
- For a richer flavor, brown the minced meat well before adding spices. This develops a deeper umami taste.
- Adjust the spice levels to your preference. For extra heat, add more green chilies or a pinch of cayenne pepper.
- To make it a complete meal, add diced potatoes or bell peppers along with the tomatoes, allowing them to cook until tender.
- A splash of yogurt or cream stirred in at the end can add a lovely richness and creaminess to the curry.
