  1. Heat ghee or oil in a large pan or Dutch oven over medium heat. Add cumin seeds and bay leaves; let them splutter.
  2. Add chopped onions and sauté until golden brown, about 8-10 minutes.
  3. Stir in minced garlic, grated ginger, and green chili (if using). Sauté for another 2 minutes until fragrant.
  4. Add the minced meat, breaking it up with a spoon. Cook until the meat is browned and all the liquid has evaporated, about 8-10 minutes.
  5. Stir in turmeric powder, red chili powder, coriander powder, black pepper powder, and salt. Cook for 2-3 minutes, allowing the spices to toast.
  6. Add the pureed or chopped tomatoes and cook, stirring occasionally, until the oil separates from the masala, about 5-7 minutes.
  7. Pour in 1/2 cup water or broth, bring to a simmer, then cover and cook on low heat for 15-20 minutes, or until the meat is tender and the flavors have melded. Add fresh peas during the last 5 minutes if using.
  8. Stir in garam masala and lemon juice (if using). Garnish generously with fresh coriander leaves.
  9. Serve hot with naan, roti, paratha, or rice.
