  1. Heat ghee or oil in a heavy-bottomed pan or Dutch oven over medium heat. Add cumin seeds, cardamom, cloves, cinnamon stick, and bay leaf. Sauté for 30 seconds until fragrant.
  2. Add the chopped onion and cook until golden brown, about 8-10 minutes. Stir in the ginger-garlic paste and asafoetida (if using), cooking for another 1-2 minutes until the raw smell disappears.
  3. Reduce heat to low. In a small bowl, mix Kashmiri red chili powder, coriander powder, turmeric powder, garam masala, dried ginger powder, and fennel powder with 2 tablespoons of water to form a paste. Add this spice paste to the pan and cook for 1-2 minutes, stirring constantly, to bloom the spices.
  4. Gradually stir in the whisked yogurt, one tablespoon at a time, ensuring it doesn’t curdle. Cook for 5 minutes, stirring occasionally, until the oil starts to separate from the masala.
  5. Add the tomato puree and salt to taste. Mix well and cook for 10-12 minutes, stirring occasionally, until the mixture thickens and the oil separates again.
  6. Gently add the paneer cubes to the gravy. Pour in the warm water or vegetable broth. Bring to a gentle simmer, then cover the pan and cook for 10-15 minutes, allowing the flavors to meld and the paneer to absorb the gravy.
  7. Taste and adjust seasoning if needed. Garnish with fresh chopped coriander leaves before serving hot with rice, naan, or roti.
