Step-by-step- Heat ghee or oil in a heavy-bottomed pan or Dutch oven over medium heat. Add cumin seeds, cardamom, cloves, cinnamon stick, and bay leaf. Sauté for 30 seconds until fragrant.
- Add the chopped onion and cook until golden brown, about 8-10 minutes. Stir in the ginger-garlic paste and asafoetida (if using), cooking for another 1-2 minutes until the raw smell disappears.
- Reduce heat to low. In a small bowl, mix Kashmiri red chili powder, coriander powder, turmeric powder, garam masala, dried ginger powder, and fennel powder with 2 tablespoons of water to form a paste. Add this spice paste to the pan and cook for 1-2 minutes, stirring constantly, to bloom the spices.
- Gradually stir in the whisked yogurt, one tablespoon at a time, ensuring it doesn’t curdle. Cook for 5 minutes, stirring occasionally, until the oil starts to separate from the masala.
- Add the tomato puree and salt to taste. Mix well and cook for 10-12 minutes, stirring occasionally, until the mixture thickens and the oil separates again.
- Gently add the paneer cubes to the gravy. Pour in the warm water or vegetable broth. Bring to a gentle simmer, then cover the pan and cook for 10-15 minutes, allowing the flavors to meld and the paneer to absorb the gravy.
- Taste and adjust seasoning if needed. Garnish with fresh chopped coriander leaves before serving hot with rice, naan, or roti.

Reheat gently on the stovetop over low heat, adding a splash of water or broth if too thick, until heated through. Alternatively, microwave in short bursts, stirring in between.

- To prevent yogurt from curdling, ensure your heat is low and you whisk it thoroughly before adding. You can also temper the yogurt by mixing a spoonful of the hot gravy into it first, then slowly adding it back to the pan.
- Kashmiri red chili powder is crucial for the authentic deep red color of Rogan Josh without making it overly spicy. Don’t skip it!
- For an even richer flavor, you can lightly pan-fry the paneer cubes until golden before adding them to the gravy, but it’s optional and adds extra calories.
