  1. Marinate the chicken pieces with ginger-garlic paste, turmeric powder, red chili powder (if using), garam masala, 1 tsp black pepper powder, and salt. Let it rest for at least 15-20 minutes.
  2. Heat oil in a heavy-bottomed pan or wok over medium heat. Add whole black peppercorns and curry leaves, let them splutter for a few seconds.
  3. Add the finely chopped onions and green chilies. Sauté until onions turn translucent and light golden brown.
  4. Add the marinated chicken to the pan. Sauté on high heat for 5-7 minutes until the chicken changes color and is lightly seared on all sides.
  5. Reduce heat to medium-low, cover the pan, and cook for 10-12 minutes, stirring occasionally, until the chicken is tender and cooked through. If the mixture is too dry, add a splash of water.
  6. Remove the lid, increase heat to medium-high. Add the remaining 1 tsp fresh black pepper powder and toss well. Cook for another 5-7 minutes, stirring continuously, until the chicken is dry and coated with the spices.
  7. Garnish with fresh coriander leaves and serve hot.
