  1. Wash the rice thoroughly and cook it with 2 cups of water (or as per your rice cooker instructions) until fluffy. Let it cool completely and separate the grains.
  2. In a blender, combine fresh coriander leaves, mint leaves (if using), grated coconut, green chilies, ginger, and garlic (if using) with a splash of water to make a smooth paste.
  3. Heat oil or ghee in a large pan or kadai over medium heat. Add mustard seeds, and once they splutter, add cumin seeds, chana dal, and urad dal. Sauté until the dals turn golden brown.
  4. Add chopped onions and curry leaves to the pan. Sauté until the onions turn translucent.
  5. Add the prepared coriander paste to the pan and cook for 5-7 minutes, stirring occasionally, until the raw smell disappears and the paste thickens slightly.
  6. Add the cooked and cooled rice to the pan. Gently mix everything until the rice is evenly coated with the coriander masala.
  7. Season with salt to taste and lemon juice. Continue to cook on low heat for another 2-3 minutes, stirring gently, to allow the flavors to meld.
  8. Serve hot with raita, papad, or your favorite South Indian curry.
