Ghee Rice

Step-by-step- Wash the basmati rice thoroughly and soak it in water for 20-30 minutes. Drain well before cooking.
- Heat ghee in a pressure cooker or a heavy-bottomed pot over medium heat.
- Add whole spices (cloves, cardamom, cinnamon, bay leaf) and cashew nuts (if using). Sauté until cashews turn light golden and spices are fragrant.
- Add the sliced onions, green chilies, and grated ginger. Sauté until the onions turn translucent and slightly golden.
- Add the drained rice to the cooker/pot and gently sauté for 1-2 minutes, ensuring the rice grains are coated with ghee.
- Pour in the water and add salt to taste. Stir gently once.
- If using a pressure cooker: Close the lid and cook for 2 whistles on medium flame. Let the pressure release naturally.
- If using a pot: Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15-18 minutes, or until all water is absorbed and rice is cooked. Do not lift the lid during cooking.
- Once cooked, let it rest for 5 minutes (if using a pot). Gently fluff the rice with a fork.
- Garnish with fresh chopped coriander leaves and serve hot.

To reheat, sprinkle a tablespoon of water over the rice, cover, and warm until thoroughly heated through. Use a pan on low heat for stovetop or short bursts in the microwave.
