  1. Boil eggs, peel, and make small slits. Lightly fry them in 1 tbsp oil until golden, then set aside.
  2. Wash and soak basmati rice for 30 minutes. Drain and cook partially (70-80%) with salt and a few whole spices (like bay leaf, cardamom) until al dente. Drain and set aside.
  3. In a large heavy-bottomed pan or pot, heat remaining ghee/oil. Add remaining whole spices and let them splutter. Add sliced onions and sauté until golden brown.
  4. Add ginger-garlic paste and green chilies, sauté for a minute until fragrant. Add chopped tomatoes and cook until soft and mushy.
  5. Stir in red chili powder, turmeric powder, and biryani masala. Cook for 2-3 minutes, adding a splash of water if needed to prevent burning.
  6. Whisk yogurt and add it to the pan, stirring continuously to prevent curdling. Cook until the oil separates.
  7. Add fried eggs, half of the mint, and half of the coriander leaves to the masala. Mix gently.
  8. Layer the partially cooked rice over the egg masala. Drizzle with saffron milk (if using), sprinkle garam masala, remaining mint/coriander, and fried onions.
  9. Cover the pot tightly and cook on low heat for 15-20 minutes (dum cooking) until the rice is fully cooked and flavors are absorbed.
  10. Gently fluff the biryani with a fork before serving hot with raita.
