Step-by-step- Boil eggs, peel, and make small slits. Lightly fry them in 1 tbsp oil until golden, then set aside.
- Wash and soak basmati rice for 30 minutes. Drain and cook partially (70-80%) with salt and a few whole spices (like bay leaf, cardamom) until al dente. Drain and set aside.
- In a large heavy-bottomed pan or pot, heat remaining ghee/oil. Add remaining whole spices and let them splutter. Add sliced onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies, sauté for a minute until fragrant. Add chopped tomatoes and cook until soft and mushy.
- Stir in red chili powder, turmeric powder, and biryani masala. Cook for 2-3 minutes, adding a splash of water if needed to prevent burning.
- Whisk yogurt and add it to the pan, stirring continuously to prevent curdling. Cook until the oil separates.
- Add fried eggs, half of the mint, and half of the coriander leaves to the masala. Mix gently.
- Layer the partially cooked rice over the egg masala. Drizzle with saffron milk (if using), sprinkle garam masala, remaining mint/coriander, and fried onions.
- Cover the pot tightly and cook on low heat for 15-20 minutes (dum cooking) until the rice is fully cooked and flavors are absorbed.
- Gently fluff the biryani with a fork before serving hot with raita.
