Step-by-step- In a small bowl, combine the diced bell peppers, red onion, and minced jalapeño (if using). Season lightly with salt and pepper.
- Heat 1 tablespoon of oil in a large non-stick skillet or on a griddle over medium heat.
- Place one tortilla in the skillet. Sprinkle about 1/4 cup of cheese over half of the tortilla.
- Spoon about 1-2 tablespoons of the vegetable mixture over the cheese.
- Sprinkle another 1/4 cup of cheese over the vegetables.
- Once the bottom of the tortilla is lightly golden and the cheese starts to melt, fold the plain half of the tortilla over the filled half to form a half-moon.
- Cook for another 2-3 minutes per side, pressing gently with a spatula, until both sides are golden brown and the cheese is fully melted and gooey.
- Remove from the skillet, transfer to a cutting board, and cut into wedges. Repeat with the remaining tortillas and filling, adding more oil as needed.
- Serve immediately with your favorite toppings like salsa, guacamole, and sour cream.

Storage & Freezer Guide
Make it last Refrigerator 3-4 days
Store leftover quesadilla wedges in an airtight container once completely cooled. Layer with parchment paper to prevent sticking.
Freezer Up to 2 months
For best results, freeze uncooked quesadillas. Assemble, then place on a baking sheet and freeze until firm. Transfer to a freezer-safe bag or container, separating with parchment paper. Cook from frozen in a skillet or oven.
Reheat Stovetop/Microwave
Reheat cooked quesadillas on a dry skillet over medium heat for 3-5 minutes per side until crispy and heated through. Alternatively, microwave for 30-60 seconds, though they may lose some crispness.
Chef’s Corner
- Don’t overcrowd the pan; cook quesadillas one or two at a time to ensure even browning and melting.
- For extra flavor, lightly toast your tortillas in a dry pan for 30 seconds per side before adding fillings.
- Experiment with different cheeses like Oaxaca, Colby Jack, or even a sharp cheddar for varying flavor profiles.
- Add other fillings like cooked black beans, corn, or sautéed spinach for more nutritional value and texture.
